venue Help!

We live in Connecticut and are having trouble finding a venue that suits our style. We were originally planning a destination wedding in Italy, but have changed our plans due to COVID. We want something very romantic and all outdoors (with a tent on hold as a rain plan). We do not want to hold our reception in a standard ballroom and are looking for something more unique with outdoor options and great views. Preferably something by the water and/or gardens. We are open to anywhere within driving distance (MA, RI, NY, NJ, VT, NH, ME). We have researched dozens upon dozens of places but nothing sticks out.

Just for reference for what we have liked so far -- We had very high hopes for Eolia Mansion at Harkness Park in Waterford, CT. It was everything we wanted between the ocean view, Italian gardens, beautiful architecture, and all at a great price. Unfortunately, we had a really negative experience working with them and have decided to look elsewhere because of it. Otherwise, it would have been great. We were really loving the idea of Brooklyn Botanical Garden, but it's a little too expensive.

I have attached some pictures as reference. At the most basic level, we are looking for some sort of patio or terrace overlooking the water where we can customize the look and feel of the outdoor dining. Alternatively, we'd be happy with somewhere that has big sweeping lawns and rolling hills. We are also open to a tent wedding - totally love the idea but it gets extremely costly when the venue doesn't include all the basics (tent, tables, chairs, etc.).

    I would try country clubs in Long Island. Maybe Crest Hollow.

    We’re getting married at Hunter Mountain, although there isn’t water, they’re are rolling mountains and lots of greenery. The ceremony is on top of the mountain and guests take the chair lift up! It’s a one stop shop location for hotel, ceremony and reception. I know you don’t want a typical ballroom but the venue location is called the copper tree bc it has a tree in the venue! It has giant windows that show the mountain with outdoor space. I highly recommend!
