Private, woodsy location in ct for wedding

My fiance and I are looking for a place to get married in October of 2025. We would like to stay within an hour of Waterbury, CT. We want a location that is very private with lots of trees. The theme we're going for is enchanted forest, so having a lot of trees around us is key. I've searched through so many different wedding venues in CT and they all seem boring and cookie-cutter. We don't need a venue that caters because we'd honestly prefer to pick out our caterer or even do food trucks. Another thing we really don't want is a venue that has multiple weddings happening at the same time, because we want complete privacy. Does anyone know of any places like this??
