My fiance and I are flying to Barcelona, staying there a few nights and then going on a Mediterranean cruise. We've never been to Europe before so we thought a cruise was a good way to hit as many countries as possible. The cruise itself was decently priced and it's Royal Caribbean so I know we'll have fun. Depends on what your interests are and what else you want to do besides going to the beach.
Portugal, Italy (Sicily, Almafi coast, Cinqterres), Croatia, all have beautiful beaches and interesting cultures. They are generally inexpensive, but some may charge a fee for the beach. Also many places in Europe have natural hot springs, (Hungary, Slovenia, Bosnia and Italy). However, if your aim is to spend most of your time at the beach then I would suggest staying closer to home this time around and coming to Europe another time to explore. Budget and time wise you would get more from a Caribbean vacation.
FYI flights within Europe are generally very cheap and trains in Italy can cost as little as 10€ per person depending on the city you wish to visit.

I recently went on a vacation to Barcelona and then flew to the Balearic Islands. Very beautiful and affordable!

So... little secret.. I live in Europe, my fiance doesn't (he will after we're married). I like Croatia, its at the top of the list. The budget is about 6000$ for 7 days including everything. We wanted like a private pool in our room etc.. maybe a tall order for our budget. I actually havent looked at Italy. I'll take a look there
