Super April 2021

d i y Appetizers!

Going to start this off by saying I know it'll be a lift, but I want to wrap my head around the scope of what I'm trying to do before I commit to it or don't.

We're anticipating around 120 people at our wedding in April. Venue is a public park, so there's no venue staff/"back room"/etc. We have a caterer for dinner, but due to cost concerns, we were planning to get trays of appetizers from a grocery store chain in the area that's also making our cake (Publix). Not super fancy, but it'll get the job done.

Lately I've been thinking that guests might feel more comfortable if the appetizers were in individual cups, instead of on a large tray. I don't think Publix would be willing to do this and if they would, it would be a significant upcharge. So I got in my head that my mom and I could DIY the apps. She's totally on board. My MIL thinks this is nuts.

Have any of y'all done this? Did you follow the 3-4 bites per person rule?

I was thinking of

- veggies and hummus/dip

- fruit and dip

- cheese cubes

- pimento cheese (was planning to make this anyway)

- maybe some kind of salsa or gazpacho shooters

We are also having a potluck "cookie table" which is a thing where my FI's family is from. Would this count as an appetizer?

I am doing a large grazing table myself for a cocktail hour app!

I've seen really cute "charcuterie cups" on Pinterest that you could do as hand helds if you would rather do that than the board!

I love the idea of a cookie table, personally!

We are also doing our own apps for cocktail hour. We aren't following the 3 bite rule because honestly I didn't know about it until now. So thank you for that.
We are doing the same things

Veggie tray Fruit tray Chips and salsa and other dipsCheese and pepperoni plater
That's what we have gotten so far.

I'm with your MIL on this one - I did not have *time* in the days leading up to my wedding to deal with doing food (and I'm SUPER organized). There's just a lot going on (some of which can't happen until the last week or so) right before the wedding. That's just my opinion. We had Publix do trays for the getting ready areas at the venue and they were great (granted it was pre-pandemic). I would call your local Publix and see what the difference in cost would be to do individual cups. (Having said that, unless things are wrapped (versus just in a cup) I would be skeptical right now.)

I think if you aren't doing anything else DIY, you can probably get it done no problem. I was thinking about DIYing a biscuit bar (we are hardcore southern Biscuit lovers) for our cocktail. But I also wanna do my own centerpieces, flowers, and hair and make-up. That seems like too much for 1 person to do in the amount of time I will have.

If you and your mom (and maybe the bridal party if they like to help) tackle that, you should be able to get it done. Just prep as much as you can the day or two before. And you could also do a trial run to see how many cups or servings of each appetizer you can make per minute. Then multiply that by how many you need total to see how long it will take 1 person. If you have others helping, divide the total time by the number of people helping. Gotta love when math makes life easier rather than more difficult!
The only tricky part will be transporting them all to the venue, so make sure you practice that too!

A grocery store will not do individual servings. Costco is an option for appetizers but again those will be platters and not individual appetizers.

I agree with your MIL you will not have time to do this with other last minute details. It's a good idea in theory but not practice. Cheese and crackers with toothpicks and tongs and veggies with dip is plenty.

I would not consider a cookie tray to be an appetizer.
