I think some of the items looks like they’re a fair amount, but others I would add more to. For instance, bagels are a pretty popular food item, so only 12 (or 24 not sure if a typo) is still on the low end for 60 people.

I would hesitate offering items that won’t feed every person. I would either get enough of everything to feed everyone, or cut down on the amount of offerings and make sure there are enough servings of each offering for every guest. You will likely have leftovers, but it would be really embarrassing to run out of food. And who doesn’t love leftovers?!

You have chosen some yummy items. Personally I d scale back the number of menu options but I d increase the amount some of the things especially the bagels, cheeses, French toast dippers, and quiches. If it was me I d have a selection of 2 or 3 sweets max, a fruit salad. a green salad or your skewers, then I d do 2 or 3 breakfast items and 2 lunch-ish items. It's hard to anticipate what everyone will choose so I d definitely have enough to cover most guests, some people may take more than one of an item and/or go back for seconds too. You could also add some scones/muffin baskets or hummus, veggies, and pita chips. Happy planning!

First question: are you the bride? If so, it is a faux pas to plan anything beyond a wishlist of the local guests who are invited to the weddings and an available date.

While everything sounds delicious, that is a ton of food, leaning towards too much. If you serve too much, you may not be able to take home leftovers depending on the venue/caterer. Historically, bridal showers were cake, punch and a platter of tea sandwiches in the hostess’s home at a non meal time that was very budget friendly. Not everyone hosting nowadays can afford or wants to serve a larger group at a restaurant, which is why costs have gotten higher over the years. 60 guests at a shower is huge even by the standards of social groups, churches and coworkers not invited to the wedding who host showers to celebrate with the couple. No matter what you serve, you need to have enough food so that everyone has an equal opportunity portion of each item. Assuming that 60 people are invited, along with the bride and the hostess, that makes 62 servings (unless there is more than one hostess) so that means 62 servings one time through the line of each item. If there is a self serve buffet, the caterers know to provide extra because some people take larger portions that are nearly always double what the nutrition experts say is a single serving. Be aware of food allergies and dietary restrictions. Honestly, I would cut that menu by half of the options. Pick a sweet breakfast item (French toast), cut the rest of the sweets, pick a breakfast main dish (tater tot casserole?), pick a lunch main dish (don’t see any options there), a side dish that is compatible with both (potatoes of some sort?), and something for the people who can’t eat meat/dairy or sugar.
The hosts will pick one dessert to cover all guests. Usually cake.
