Hmm, I don't know Boston very well.

Do we know what opening phase they are in?

Do you know where you're staying? And what kind of activities she's interested in? We're currently in phase 2 of reopening (outdoor dining and indoor retail stores recently reopened) and will most likely be in phase 3 in August, which means masks will be required but most things should be open with somewhat limited capacity.

We wanted to do eat locally, maybe do a drag show one night, have one fancy night out, maybe a rooftop pool. These are all things I’ve been suggested

I don't know about any drag shows, but I googled drag shows Boston and I found this article about drag brunches which sounds like fun. https://www.boston.com/food/restaurants/2019/05/31/drag-brunches-in-boston
The Colonnade hotel has a rooftop pool and it's in a pretty central location (Copley Square).
I don't think the actual hotel has reopened yet, but it might by August and it's in an area with a lot of other hotels anyway. The Seaport is a fun new area that would be good for a fancy night out. This is a cool rooftop bar that I've been to there. https://outlookkitchenandbar.com/lookout-rooftop-and-bar/. Museums aren't open yet, and I have no idea if they'll be having any events once they do open, but there are a ton of them and sometimes the Museum of Fine Arts and the Isabella Stuart Gardner museum have events at night. Also, if you want a more low key day the Lawn on D usually has some fun outdoor things. (It's not super easy to get there if you're relying on public transportation or if you drive and need to park, but it's easy to get a taxi/uber/lyft here.) https://www.signatureboston.com/lawn-on-d
